The coffee growers in India store their green coffee harvest in large warehouses where it waits for the monsoon rains. When the rains arrive the warehouse doors are opened and the moist monsoon aire circulates around the coffee beans making them swell and take on a slight yellow colouring. The blend has its origins from the times of the British Raj when during the months that the beans were transported by sea from India to Europe, the humidity and the sea winds combined with the dampness of the wooden ships caused the coffee to ripen from the fresh green bean to a more aged pale yellow. This had the impact of maturing the flavour of the beans, decreasing the acidity and developing the creamy body and earthy notes, giving it its unique flavour.
To experience these beans at their absolute best, grind as and when you need them, altering the grind to suit the brewing method.
